Our Chef’s Favorite Winter Comforts & Seasonal Sips

After the bustle of the holidays, winter brings a welcome shift in the kitchen. It’s a season defined by comfort, deeper flavors, and a slower, more thoughtful approach to cooking. From cozy dishes to seasonal sips, this is when our kitchen leans into what feels warm, familiar, and satisfying.

Cozy Comforts from the Kitchen

In winter, our chefs gravitate toward dishes that feel grounding and comforting. A warm, home-style pot pie brings that sense of comfort to the table, prepared with seasonal ingredients that change daily. The State and Lake menu also features Butternut Ravioli, carefully crafted with brown butter, sage, and fresh Wisconsin Parmesan, while the Beef Tenderloin Medallions deliver familiar satisfaction with a blue cheese crust, marinated red onions, a double-baked potato, and rich demi glaze.

Seasonal Winter Ingredients

Winter ingredients bring depth and balance to the menu, shaping dishes that feel both comforting and intentional. Root vegetables, winter squash, hearty greens, and bright citrus play a key role in the kitchen this time of year, offering natural sweetness, richness, and contrast. Fresh herbs are used thoughtfully to finish and brighten dishes, adding layers of flavor that keep winter cooking vibrant without overpowering its warmth.

Seasonal Sips

This time of year, our kitchen thoughtfully crafts drinks that balance the menu and complete the winter dining experience. A spirit-forward cocktail built with whiskey or bourbon, demerara, and warming bitters feels cozy and familiar, while the mocktails on the menu are just as intentional, featuring bright herb- and citrus-forward flavors like lemon, orange, and mint. Seasonal highlights also include a full-bodied Cabernet Sauvignon from Washington’s Columbia Valley and a rich Chardonnay from Napa Valley.

Behind the Scenes

After the pace of the holiday season, winter offers a welcome shift in the kitchen. This is when menus evolve, comfort dishes take center stage, and seasonal ingredients guide each decision. It’s a time for thoughtful cooking, intentional flavors, and creating the kind of dining experience that feels especially inviting in winter. We look forward to welcoming you in and sharing the warmth of the season with you at our table, on the corner of State and Lake Streets in Chicago.
